Cream Cheese Chocolate Muffins

Muffins that combine two of my favorite things... chocolate and cream cheese.

Yield: 20 muffins
  • 8 oz. light cream cheese
  • 1/2 c. sugar
  • 1 c. semi-sweet chocolate chips
  • 1 1/2 c. flour
  • 1 c. sugar
  • 1/3 c. cocoa powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 6 Tbsp. margarine
  • 1 c. warm water
  • 1 tsp. vanilla extract
  1. Soften cream cheese and margarine stick. Preheat oven to 350F. Line muffin cups with paper liners.
  2. Beat cream cheese, sugar and egg in small bowl until smooth. Add chocolate chips. Set aside.
  3. Measure next 5 ingredients into large bowl. Stir. Make a well.
  4. Add margarine, water and vanilla to well. Beat for about 2 minutes until smooth.
  5. Fill with 2 tbsp of batter each. Spoon about 1 tbsp cream cheese mixture over top.
  6. Bake in 350 degree oven for 30 to 35 minutes.
