Cream Cheese Chocolate Muffins

Muffins that combine two of my favorite things... chocolate and cream cheese.

Yield: 20 muffins
- 8 oz. light cream cheese
- 1/2 c. sugar
- 1 c. semi-sweet chocolate chips
- 1 1/2 c. flour
- 1 c. sugar
- 1/3 c. cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 6 Tbsp. margarine
- 1 c. warm water
- 1 tsp. vanilla extract

- Soften cream cheese and margarine stick. Preheat oven to 350F. Line muffin cups with paper liners.
- Beat cream cheese, sugar and egg in small bowl until smooth. Add chocolate chips. Set aside.
- Measure next 5 ingredients into large bowl. Stir. Make a well.
- Add margarine, water and vanilla to well. Beat for about 2 minutes until smooth.
- Fill with 2 tbsp of batter each. Spoon about 1 tbsp cream cheese mixture over top.
- Bake in 350 degree oven for 30 to 35 minutes.
